This recipe was created by a cyber friend. I've never met Jill but she is an amazing cook and I am a big fan of her blog. This soup is a piece of cake to make and so hearty and delicious!
1.5lbs boneless skinless chicken breasts
1 C. chopped onion
1 C. chopped carrot
1 C. chopped celery
3 cans cream of chicken soup (98% FF, reduced sodium)
3 C. FF reduced sodium chicken broth
2 boxes long grain and wild rice with seasoning
Place the chicken in the bottom of the crockpot
Add in the onion, carrot, celery and rice.
Mix soup and chicken broth and pour on top.
Cook for 6-8 hours on low.
Shred the chicken in the soup and add salt and pepper to taste.
